Blueberry honeyed mascarpone on toasted spice bread

  • 375 ml (1 1/2 cups) fresh Quebec blueberries
  • 20 ml (4 tsp.) honey
  • 125 g (4 oz.) mascarpone cheese
  • 12 slices of homemade or store-bought spice bread, toasted
  • Mint or lemon balm leaves


  1. Mix blueberries and half the honey in a bowl; toss and set aside.
  2. In a different bowl, whip mascarpone with the other half of the honey.
  3. Layer toasted spice bread with the mascarpone mixture and honeyed blueberries.
