Mushroom and country ham fricassee



  • 500 g (approx. 1 lb.) white mushrooms, quartered
  • 60 ml (1/4 cup) butter
  • 60 ml (1/4 cup) olive oil
  • 5 ml (1 tsp.) fresh Quebec garlic, minced
  • 5 ml (1 tsp.) fresh ginger, peeled and minced
  • 275 g (approx. 10 oz.) country ham, cut into strips
  • 80 ml (1/3 cup) light soy sauce
  • Salt and pepper
  • Chopped chives to garnish


In a skillet, sauté mushrooms in butter and oil approximately 3 min., drain and set aside. Add garlic and ginger to skillet; cook another 3 min., taking care not to brown garlic. Add ham and cook 2 more min. Pour in soy sauce and reduce liquid by half. Add mushrooms, season with salt and pepper and sprinkle with chives.
