Cheesy apple-leek strudel



  • 6 apples
  • 1/2 Quebec leek
  • 30 ml (2 tbsp.) butter
  • 180 ml (3/4 cup) sugar
  • 100 ml (31/2 oz.) water
  • 15 ml (1 tbsp.) cornstarch
  • 1/2 fresh vanilla bean
  • 5 ml (1 tsp.) cinnamon
  • 200 ml (7 oz.) butter
  • 5 sheets phyllo dough
  • 150 g (5 oz.) Canadian feta cheese, crumbled
  • 3 egg yolks
  • 45 ml (3 tbsp.) milk


Preheat oven to 180°C (350°F).

  1. Peel, core and chop apples; thinly slice leek. Melt 30 ml (approx. 2 tbsp.) butter in a large skillet and brown leek; add apples, sugar, water and cornstarch. Cook over low heat for 10 min.
  2. Add vanilla and cinnamon. Set aside. Melt butter. Unroll phyllo dough, one sheet at a time, and brush with melted butter. Repeat for all 5 sheets and stack as you go along.
  3. Cover the center of the dough lengthwise with the cheese. Cover with the apple mixture and roll dough, thoroughly sealing ends. Beat egg yolks and milk in a small bowl. Brush the egg mixture over the strudel.
  4. Bake for 12 min. on a buttered cookie sheet until dough is nice and golden.
  5. Serve slices of warm strudel.
