Leek pie



  • 6 Quebec leeks
  • 30 ml (2 tbsp.) butter
  • Salt and freshly ground pepper
  • 4 eggs
  • 45 ml (3 tbsp.) 35% cream
  • 125 ml (1/2 cup) milk
  • 90 g (3 oz.) cheddar cheese
  • 10 ml (2 tsp.) fresh thyme
  • 30 ml (2 tbsp.) chives, snipped


  1. Remove green part of leeks. Clean and thinly slice remaining white part.
  2. Heat butter in a non-stick skillet and brown leeks for a few minutes stirring frequently. Season with salt and pepper and set aside.
  3. Preheat oven to 180°C (350°F).
  4. Roll out dough and place in a round or square 23-cm (9-in.) baking dish; fill with leek.
  5. Mix eggs, cream and milk in stainless steel mixing bowl. Season and pour over leek.
  6. Cut cheese into thin slices and cover pie.
  7. Bake for 30 min. Sprinkle with minced thyme. 
  8. Serve warm with a green salad.
