fiddlehead recipe


  • 1/4 livre de beurre 125 ml
  • 2 gousses d'ail pressé
  • 1 livre de tête de violon
  • 500 grammes jus de lime ou de citron
  • sel et poivre


Steam fiddleheads in petal steammer for 8 to 10 minutes. Heat butter and saute garlic gently. Add fiddleheads and continue to saute. Squeeze juice of lemon over all and cook gently 2-3 minutes. Season with salt and fresh pepper.

Serves 2-4.
