Maple squash ratatouille

ingredients

  • 30 ml (2 tbsp.) olive oil
  • 250 ml (1 cup) diced squash, your favourite (butternut squash, pepper squash, pumpkin, etc.)
  • 1 green summer squash, diced
  • 1 yellow summer squash, diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 375 ml (1 1/2 cups) mushrooms, quartered
  • 1 onion, coarsely chopped
  • 3 cloves garlic, minced
  • 250 ml (1 cup) Italian tomatoes, diced
  • 60 ml (1/4 cup) Quebec maple syrup
  • Basil and oregano, fresh or dried to taste
  • Salt and freshly ground pepper
     

Preparation

Heat oil in a pot and brown vegetables for 4 or 5 minutes. Add tomatoes, maple syrup, salt and pepper; cook for 4 or 5 minutes. Add herbs at the last minute. Serve as a side dish or au gratin.
