Melon salad



  • 1 red onion, shaved
  • 3 small melons, any type, seeded and halved
  • extra-virgin olive oil, to drizzle
  • white balsamic vinegar, to drizzle
  • handful mint leaves, for garnish
  • coarse sea salt , to taste
  • pepper, to taste


  1. Using a melon baller, make balls from the melon halves and place in a bowl.
  2. Add spanish onion and mint leaves.
  3. Drizzle with olive oil, white balsamic vinegar, salt and pepper to taste.

Serve as an accompaniment, delicious with fish.
