- 1 red onion, shaved
- 3 small melons, any type, seeded and halved
- extra-virgin olive oil, to drizzle
- white balsamic vinegar, to drizzle
- handful mint leaves, for garnish
- coarse sea salt , to taste
- pepper, to taste
- Using a melon baller, make balls from the melon halves and place in a bowl.
- Add spanish onion and mint leaves.
- Drizzle with olive oil, white balsamic vinegar, salt and pepper to taste.
Serve as an accompaniment, delicious with fish.
