Fresh and healthy cucumber

ingredients

  • 2 cucumbers
  • 2 carrots
  • 6 radishes
  • 3 tablespoons of olive oil
  • 3 teaspoons of lemon juice
  • curry, salt and pepper

Preparation

  1. Cut cucumbers in lengthwise. Remove a thin slice below that they are holding up well. Remove the seeds, pat dry with paper towel.
  2. Grate the carrots and radishes to make about 1 cup of each vegetable. Place in a bowl and toss the carrots, radishes, olive oil, lemon juice, curry, salt and pepper.
  3. Stuff the cucumbers and cut into portions.
