- 2 cucumbers
- 2 carrots
- 6 radishes
- 3 tablespoons of olive oil
- 3 teaspoons of lemon juice
- curry, salt and pepper
- Cut cucumbers in lengthwise. Remove a thin slice below that they are holding up well. Remove the seeds, pat dry with paper towel.
- Grate the carrots and radishes to make about 1 cup of each vegetable. Place in a bowl and toss the carrots, radishes, olive oil, lemon juice, curry, salt and pepper.
- Stuff the cucumbers and cut into portions.
